[Production Report] Luxuriously crafted with Amaou strawberries! Our spring-herald fruit liqueur, "Koharu," will be ready soon.🍓

Hello everyone! This is Amanosato Brewery.
Today, we’re giving you a sneak peek inside the brewery at the production of our special limited-edition sake, "Aru Koharu," which evokes the arrival of spring. We are currently making steady progress on the final preparations to get this to all of you!

■ An Ultra-Luxurious 100% "Amaou" Puree🍓

For this release, we are using magnificent "Amaou" strawberries grown with meticulous care by Kotoge Farm, also located here in Fukuchi Town. We carefully process these succulent strawberries into a puree using a juicer, maintaining the highest level of luxury possible.

Mixing with a juicer Strawberry bath

With the rich, sweet-and-sour scent spreading throughout the brewery and this beautiful sea of strawberries, our brewers honestly exclaimed, "I want to take a bath in this 100% Amaou puree!" (haha).

■ The Moment of Pressing: When the Brewery Turns a Soft Cherry Color

Pink moromi mash

Normally, the tanks in our brewery are filled with stark white moromi (mash), but the tank for "Aru Koharu" is dyed a lovely, soft pink.

We then use the traditional funa-shibori (tank pressing) method to gently extract the sake without applying excessive pressure. During this process, even the sake bags used to hold the liquid turned a faint shade of pink! The task of packing the mash into the bags felt so spring-like that it truly lifted our spirits.

■ Vibrant Color and Dramatically Evolving Flavors

The moment of pressing has finally arrived!
When you pour the freshly extracted sake into a glass, it glows with a stunning, pale pink hue that is truly enchanting.

As for the flavor, it offers a surprising transformation within a single sip.
At the very first taste, it presents itself with the clean, restrained profile typical of fine sake. Mid-palate, the pleasant acidity derived from the strawberries tightens the flavor, and by the finish, the gorgeous, sweet aroma of the "Amaou" strawberries blossoms fully in your mouth!

Beautiful to look at, surprising to drink. This is shaping up to be a product we’re proud of—one that packs the joy of spring into every drop.

Please wait just a little longer until sales begin!🍓🍓🍓
